Homeade Peach Cobbler

Here is a delicious recipe for peach cobbler that will make a great dessert for any time.
Ingredients:
4 cups of peeled, sliced peaches
2 cups of sugar
1/2 cup of water
8 tablespoons of butter
1 1/2 cups self rising flour
1 1/2 cups milk
ground cinnamon

Instructions:
Preheat oven to 350 degrees. Combine the peaches, 1 cup of sugar, and water in a sauce pan and mix well. Bring this to a boil and let it simmer for about ten minutes. Now remove from the heat. Place the butter in a three quart baking dish and let the butter melt in the oven. Mix the leftover 1 cup of sugar, flower, and milk slowly so it does not get clumpy. Pour this mix over the melted butter. Spoon fruit on the top pouring the syrup on also. sprinkle the top with ground cinnamon. Bake for thirty to forty five minutes.
* Serve with vanilla ice cream or whipped cream to make it even better!

Instead of peaches, you can also add apples instead.

Homemade Chicken Noodle Soup

During the cold winter months everyone wants to have a hot bowl of soup. Here is a great recipe for chicken noodle soup that will make you feel warm and cozy wherever you are.
Ingredients:
1 (3 1/2 pound chicken) whole
3 quarts low sodium chicken broth
6 peeled carrots
4 stalks of celery
3 medium peeled onions
5 black peppercorns
1 clove of fresh crushed garlic
10 sprigs of parsley
2 sprigs of thyme
1 bay leaf
2 tablespoons unsalted butter
4 leeks
1 tablespoon salt
1 teaspoon fresh ground pepper
3 cups of medium egg noodles

How to make the stock:
Place the chicken and the broth in a large pot and set it over medium heat. Then chop 2 carrots 2 celery ribs and one onion. Add these to the broth. Add the peppercorns,  2 sprigs of parsley, garlic, thyme, bay leaf, and enough water so that it covers the chicken. Bring the broth to a boil. Reduce heat to a simmer and cook until the chicken is tender. This should take about and hour and a quarter. Remove the chicken and place it in a large bowl. Strain the broth through a sieve into a large clean bowl or stockpot. Throw away the vegetables.

How to make the Soup:
Skim fat off the top of the broth. Slice any remaining carrots, celery, onion and leeks and put them to the side  for now. Remove and throw away and skin and bones off of the chicken. Cut chicken into 1/2 inch pieces. Chop the remaining parsley and put that to the side too. Melt the butter in a large dutch oven over medium heat. Add the vegetables and cook for about 7 minutes. Add the chicken, broth, salt, and pepper. Simmer the soup until the vegetables are tender (about 1 hour). Stir in the noodles and parsley cook until the noodles are cooked. Serve.

Candy Cane Thumbprint Cookies

Since it is almost Christmas time and everyone likes to make cookies around the holidays here is a great cookie recipe that only takes about an hour to make!
Ingredients:
2/3 cup of butter (softened)
1/2 cup sugar
1/4 teaspoon of salt
1 egg
1 teaspoon vanilla
1 1/2 cups of flour
peppermint filling
peppermint candy canes (crushed)


In a large mixing bowl use and electric mixer on medium beat the butter for thirty seconds. add sugar and salt. Beat until combined. Next, beat in egg and the vanilla, beat in as much flour as you can with the electric mixer.Just hand stir any of the remaining flour. Cover and chill for an hour or until the dough is easy to handle.
Preheat the oven to 375 degrees. shape dough into one inch balls. Place 2 inches apart on an ungreased cookie sheet. Bake for 8 to 10 minutes. Now remove from the oven and make a small indent in the middle of the cookie using the bowl of a small measuring spoon. Move cookies to a wire rack and let them cool.
Before serving use a frosting bag with a round tip to put peppermint filling into the center of the cookie where you made the indent. Sprinkle with crushed candy canes. This batch of cookies can make about three dozen.

How to make the peppermint filling:
In a mixing bowl beat 1/4 cup softened butter with and electric mixer on high for about 30 seconds. Beat in a 1/4 teaspoon peppermint extract. Gradually beat in 1 1/2 cups of powdered sugar. Beat in 2 to 3 teaspoons of milk.

Homemade Mac n' Cheese

Here is a great recipe for homemade macaroni and cheese that everyone will love!
Ingredients:
1/2 pound on elbow macaroni
3 tablespoons of butter3 tablespoons of flour
1 tablespoon of powdered mustard
3 cups milk
1/2 cup of yellow onion(finely diced)
1 bay leaf
1/2 teaspoon of paprika
1 large egg
12 ounces of sharp cheddar that is shredded
1 teaspoon of kosher salt
fresh black pepper
Topping:
3 tablespoons of butter
1 cup bread crumbs

Preheat oven to 350 degrees. in a pot of boiling water cook the pasta.in a separate pot melt the butter while your pasta is cooking. Whisk in the flour and mustard. make sure to keep it moving for five minutes. Make sure there are no lumps. Stir in the milk, bay leaf, onion, and paprika. simmer for ten minutes then remove the bay leaf. temper in the egg. stir in 3/4 of the cheese. Season with salt and pepper. Fold the macaroni in the dish and pour it into a two quart casserole dish. Top with the cheese that is left over. Melt the butter in a saute pan and toss the breadcrumbs in the butter. Top the mac n' cheese with the bread crumbs. bake for 30 minutes. take out of the oven and let it rest for at least five minutes before serving.

If you have leftovers you can fry the macaroni and cheese later to make a whole new meal!

This is a delicious and fairly easy way to make your own macaroni and cheese and think out of the Kraft box!

Chocolate Chip Cookies

Chocolate chip cookies are the number one most made cookie in the United States. Here is a recipe for chocolate chip cookies that will make your mouth water.
Ingredients needed:
3/4 cup of sugar
3/4 cup of packed brown sugar
1 cup of butter (softened)
2 large eggs (beaten)
1 teaspoon vanilla extract
2 1/4 cups all purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
Preheat the oven to 375. In a bowl mix the butter, sugar, brown sugar, vanilla extract, and eggs. Cut in flour, baking soda, and salt. Using a mixer makes this step easier, if you do use a mixer make sure it is on a low speed setting. Stir in the chocolate chips by hand. make sure the chips are evenly dispersed throughout the dough. Drop the dough onto an ungreased cookie sheet in tablespoon sized drops. make sure they are spread 2 inches apart to give them room to spread out. Bake 8 to ten minutes. Let them cool completely then remove with a spatula. The cookies should be solid on the outside and warm and gooey on the inside.
*to make theses cookies even better add nuts!

Easy Fried Chicken

Every person who lives in the south should know how to make fried chicken. Fried chicken be delicious but sometimes time consuming and easy to burn or mess up.  Here's a delicious, fool proof  recipe for fried chicken that will make your mouth water:
Ingredients:
3 eggs
1/3 cup of water
2 cups of self rising flour
1 cup of hot sauce
1 teaspoon of pepper
1-2 1/2 lbs. of chicken (cut into pieces)
Oil for frying
In a medium size bowl, beat the eggs mixed with the water and add your hot sauce to the egg mixture until the color of the eggs is a nice deep orange color. Now, in another bowl combine flower and pepper. Dip the chicken in the egg and hot sauce mixture and cover it well with the flower mixture so it makes a nice even breading over the chicken.
Heat the oil to 350 degrees in a deep pot.
Do not fill the pot more than half way with oil!
Fry the chicken in the oil until it is brown and crisp looking.
