Candy Cane Thumbprint Cookies

Since it is almost Christmas time and everyone likes to make cookies around the holidays here is a great cookie recipe that only takes about an hour to make!
Ingredients:
2/3 cup of butter (softened)
1/2 cup sugar
1/4 teaspoon of salt
1 egg
1 teaspoon vanilla
1 1/2 cups of flour
peppermint filling
peppermint candy canes (crushed)

In a large mixing bowl use and electric mixer on medium beat the butter for thirty seconds. add sugar and salt. Beat until combined. Next, beat in egg and the vanilla, beat in as much flour as you can with the electric mixer.Just hand stir any of the remaining flour. Cover and chill for an hour or until the dough is easy to handle.
Preheat the oven to 375 degrees. shape dough into one inch balls. Place 2 inches apart on an ungreased cookie sheet. Bake for 8 to 10 minutes. Now remove from the oven and make a small indent in the middle of the cookie using the bowl of a small measuring spoon. Move cookies to a wire rack and let them cool.
Before serving use a frosting bag with a round tip to put peppermint filling into the center of the cookie where you made the indent. Sprinkle with crushed candy canes. This batch of cookies can make about three dozen.

How to make the peppermint filling:
In a mixing bowl beat 1/4 cup softened butter with and electric mixer on high for about 30 seconds. Beat in a 1/4 teaspoon peppermint extract. Gradually beat in 1 1/2 cups of powdered sugar. Beat in 2 to 3 teaspoons of milk.
This is a delicious cookie recipe that will bring joy to everyone during the holidays.

  2. Those look really good!! Have you ever made them before? I always love baking around Christmas and I want to know if they are difficult to make. And maybe they would go well with Chick-fil-a's peppermint milkshakes? hahah or that might be overkill, but I love the sound of them and will definitely make some!
